Kizartma (Turkish Fried Veggies with Yoghurt Sauce)

my husbands favorite šŸ™‚ we eat it with rice, making it a simple but delicious vegetarian meal. Here is a very informal, quick type of the recipe (sorry, my husband has to use the computer, so i’m in a rush hehe)

-fry eggplants, pepper, potatoes, carotts, yellow squash/zucchini

– cook lots of crushed garlic (maybe 12 cloves), and cubed tomatoes (around 6 roma tomatoes). Keep on cooking until it becomes a sauce.

– Yoghurt mixed with fresh crushed garlic.

– how to serve: layer all the fried veggies, and then the yoghurt mix, and then the sauce. Bon appetit!

Party Fruit Lemonade

This serving is for 90 people, so measure accordingly to how many guests you will have, but usually, with this drink, one guest will probably chug many servings.

Ingredients:

  • one 16 oz. can orange juice concentrate
  • one 12 oz can lemonade concentrate
  • two 46 oz. can unsweetenedĀ pineapple juice
  • four 28 oz. bottle ginger ale (chilled)
  • two 28 oz. bottle carbonated water (chilled)
  • 2 1/2 cups sugar
  • 1/4 cup lime juice
  • ice cubes
  • fresh strawberries cut half
  • oranges-Ā thinlyĀ sliced

Method:

  1. Combine water and frozen concentrated. Stir to dissolve.
  2. Stir in pinapple juice, sugar, and lime. Stir to dissolve sugar.
  3. Leave in fridge. When ready to serve, pour half of mixture of juice over ice in a large punch bowl.
  4. Slowly pur in 2 Ā bottles of ginger ale and 1 bottle of carbonated water. Stir gently to mix.
  5. Garnish with the fruits.

Kalbura Basti (Turkish Walnut Cookies)

This dessert taste as good as baklava. I love the walnuts surprise inside the cookies when I first ate it, and the moist texture of the cookie, just makes this cookie absolutelyĀ irresistibleĀ to eat.

Ingredients:

  • 3 cups flour
  • 2 sticks butter, room temperature
  • 2 tbsp yoghurt
  • 2 tbsp vegetable oil
  • 1 egg
  • 2 tsp baking powder
  • 1 chopped walnut

Syrup:

  • 2 1/2 cups sugar
  • 2 1/2 cups water
  • 1 tbsp lemon juice

Method:

  1. First, prepare the syrup. Combine sugar and water in a pot to boil for 10 minutes, and then add the lemon juice. Set aside and cool down in the fridge.
  2. The dough: Mix butter, flour, yoghurt, vegetable oi;, 1 egg, baking powder in a bowl and knead well with your hand.
  3. Cover the bowl with damp kitchen towel and let it sit for 10 minutes or so.
  4. After 10 minutes, take some of the dough, and make a flat circle, add a walnut in the middle, fold, seal, and shape it like the picture above.
  5. Then, with a grater, touch the top of the dough lightly that it makes a nice indentation.
  6. After all the dough have been inserted and shaped, bake them for 350 degrees celcius for 10-15 minutes, and then at 375 degrees, top shelf, Ā until golden brown.
  7. Take it off the oven, and pour the cold syrup all over it. Leave it that way, until the cookie absorb the syrup.
  8. ServeĀ and enjoy šŸ™‚

Yoghurt Cookies (turkish)

Whenever I make these cookies to a gathering, they always ask for the recipe!

Ingredients:

  • 1 stick butter, room temperature, if in a hurry (and only have cold butter), Ā just microwave 20 seconds
  • 1/2 cup olive oil
  • 1/2 cupĀ yoghurt
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 2 1/4 cup flour
  • feta cheese / cream cheese
Method:
  1. mix this all together nicely, and then add 1 tsp baking powder. mix again.
  2. divide into 12 balls. and then make hole in the inside and insert cream cheese or feta cheese. I like feta cheese more.
  3. make it into a nice ball and flatten it a little bit
  4. brush egg yolk and sprinkle with black seeds
  5. bake for 15-20 minutes at 375 or until golden brown

p.s: This dough is good for anything, instead of cheese, cooked ground beef/chicken with onions, Ā or mashed potatoes with seasonings will also taste good.

 

Sonia's Olive Cheese Melts

Ingredients
1 can olives, cut into halves
3 tablespoons of mayo (the one I used had olive oil seasoning, but you can always put in your own)
1.5 cup shredded cheese (I used colby jack but you can use any)
1/3 onion, cut into small pieces
6 English muffins or any flat bread, cut into halves or quarters
Spices (I used italian seasoning and crushed red pepper, but you can use anything)…this is an easy recipe to play around with!
Directions
1. Preheat oven to 400 degrees F.
2. Combine all the ingredients except the bread and mix in a mixing bowl
3. Spread onto the muffins/bread.
4. Bake for 10 minutes.
Super easy and tasty appetizer!
p.s: you can add anything you like in this recipe, just like pizza. I’ve added sliced peppers, spinach, sausage, gr. beef or chicken, like I said, anything! šŸ™‚

Maklube (the gulbeden style :) )

Okay, I love maklube, I eat it all the time Ā when I go to my arabic friends house before I get married…never asked for the recipe though šŸ˜¦ and now I’m all the way in Texas and missing it.

So, here is my take on maklube, and…..it’s DELICIOUS!….

Can’t say enough, it’s easy and definitely something your guests will love šŸ™‚

Ingredients:

  • 1 package cauliflower, cut into medium pieces
  • 1 big eggplant or around 2-3 chinese medium sized eggplant, cut into big pieces.
  • 3 carrots, peeled, and cut into chunks.
  • 2 potatoes, peeled, and cut into medium cubes
  • 1 onion, finely chopped
  • 1 chicken, cleaned, skinned, and cut into 12 pieces.
  • 3 Ā cups uncle ben’s rice, or enriched long grain rice
  • chicken bouillon cubes(opt.)
  • 2 tsp cumin powder
  • 6 cups water
  • salt to taste
  • 2-3 tbsp curry powder
  • toasted almonds (sliced or whole)

Method:

  1. Marinate the chicken with salt and 1 tbsp of curry powder at least 4 hours, but I usually do it overnight, so the taste will absorb through the chicken.
  2. Fry the first four ingredients (the veggies) separately until tender.
  3. In a big deep pot, fry the onions with oil until tender, then add the chicken, cook it together with the onions for 5 minutes. Add the rice, and crushed bouillon cubes. Add the fried veggies.
  4. In a separate bowl, mix Ā the curry powder, salt and water well, and add it to the pot. Mix just a little bit, and taste the maklube liquid if it has enough salt or too much salt.Cover well.
  5. Boil and then lower to med. heat for 30-45 minutes or until chicken is tender(you can also cook it in a pressure cooker which I usually do, for around 20 minutes).
  6. Serve in a nice big plate, and sprinkle with almonds. Serve with your favorite salad on the side and dig in! šŸ™‚

p.s: please your own intuition when adding Ā the amount salt, and curry powder!. I like foods that have enough salt than bland with less salt, and more curry powder, but everybody’s taste is different, so adjust willingly šŸ™‚

Meat Tartlets

Every eid, indonesians in texas gather to celebrate the big day! and two years ago, i stumble upon these tartlets that my friend made and ABSOLUTELY LOOVE!!
a recipe definitely WORTH trying! not kidding!
Hope I have time to take the pic and post it here, we always end up finishing it before I even remember to take the pic šŸ˜¦
Nyummy, cute appetizers, to serve for your special guests! šŸ™‚
Ingredients:
1 pack (3 ounces) cream cheese, softened
1/2 cup butter, softened
1 cup + 1 tblsp all purpose flour, divided
1 egg
1/3 cup heavy whipping cream
3/4 cup shredded Swiss cheese
1/2 cup cooked ground beef
Method:
In a small bowl, beat cream cheese & butter until smooth. Add 1 cup flour; mix well. Cover and refrigerate for one hour.
Shape dough into 18 balls. Press onto the bottom and up the sides of greased miniature muffin cups. In a bowl, whisk egg and cream. Stir in remaining flour until smooth. Add cheese and cooked ground beef; mix well.
Spoon about 1 tbsp into each cup.
Bake at 450 FĀ forĀ 7 minutes.
After 7 minutes, reduce the heat to 325 F and continue baking for another 17-20 minutes or until a knife inserted near theĀ center comes out clean.
Makes 1 1/2 dozen.
PS: You can replace the cooked beef with cooked chicken, shrimp orĀ fish.
