Great dipping sauce for samosas, pakoras, shami kebab, etc.
- 1 lb tamarind
- 2-3 tbsp sugar
- salt to taste
- 1 1/2 tsp cumin powder
- 1 tbsp coriander powder
- 1/4 tsp cayenne pepper
- Microwave 2 cups water with tamarind until hot (around 1-2 minutes). Mash and strain all the pulp, discard pips and piths. Transfer to a corning dish. Add sugar and all other ingredients. Mix well.
- Cook on low heat until it has a ketchup consistency.
