Imli Chutney (Tamarind Sauce)

Great dipping sauce for samosas, pakoras, shami kebab, etc.


  • 1 lb tamarind
  • 2-3 tbsp sugar
  • salt to taste
  • 1 1/2 tsp cumin powder
  • 1 tbsp coriander powder
  • 1/4 tsp cayenne pepper


  1. Microwave 2 cups water with tamarind until hot (around 1-2 minutes). Mash and strain all the pulp, discard pips and piths. Transfer to a corning dish. Add sugar and all other ingredients. Mix well.
  2. Cook on low heat until it has a ketchup consistency.
