- 1 bunch leek, cleaned well, and sliced
- 3 carrots, grated
- 1 cup water
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1/2 cup rice
- salt and pepper to taste
- 1 tbsp sugar
- Combine leek, carrot, water, and olive oil in a saucepan.
- Cook until boil, and lower heat. Cook for 45 minutes.
- Add in rice, sugar, salt, and lemon juice and cook for another 15 minutes or until rice is cooked.
- Serve cold or room temperature.
