Coconut Cake (Arabian Style)

Ingredients:

  • 3 eggs
  • 2 cups coconut flakes + 2 tbsp to sprinkle
  • 1.5 cups flour
  • 1 cup milk
  • 1 cup sugar
  • 1/2 cup oil
  • 3 tsp. baking powder
  • 1 tsp vanilla

Syrup:

  • 2 cups water
  • 2 cups sugar

Directions:

  1.  In a small pot, mix sugar and water and cook just until boiled. Set aside to cool.
  2. Mix all the ingredients together (except the syrup) and bake in oven 350F until the top is golden brown.
  3. Pour syrup and sprinkle 2 tbsp coconut flakes.
  4. Cut as desired into pieces and serve.
